Morrisons Cafeteria(piccadilly) at the Huntington Mall😫

I have the fondest childhood memories going there for dinner then walking around the mall and always ending up at KB toys😁

My favorite dish was the mac n cheese

My mom and dad always got the fried chicken, mac n cheese or mashed potatoes and cucumber salad a roll and for dessert we would have red jello or pudding😊

I have tried numerous recipes looking for Morrisons Cafeteria perfect recipe

I found it yesterday 😍

Ingredients

  • 2.5 cups elbow macaroni
  • 1/4 cup unsalted butter
  • 1/2 cup all purpose flour
  • 2 1/4 cup milk, warmed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 2 cups cheddar cheese (extra sharp) divided

Directions

  1. Preheat oven 400 degrees
  2. Cook macaroni according to package directions and drain
  3. Heat butter in small saucepan, medium heat, stir on flour and cook 1 minute
  4. Use a whisk add milk, stir constantly until sauce thickens
  5. Add salt and pepper
  6. Beat eggs, slightly add some sauce to egg mixture
  7. Add egg to sauce stir in
  8. Set aside 1/3 cheese
  9. Add 1/3 macaroni to a buttered 2 qt. Casserole. Alternate layers of macaroni and cheese
  10. Pour sauce all over top of macaroni and cheese
  11. Top with cheese
  12. Bake 25-30 minutes and serve

Enjoy as a main dish or a yummy side dish

Chicken Crescent dinner

Well I dont know about you but I am drawn to comfort food, I love mashed potatoes gravy, rolls, chicken, mac n cheese, soup and pretty much anything that just makes you feel happy about😂🤗

For years well since we have lived on the family farm we all eat dinner as a family 2 days out of the week(not to mention sometimes we go out too). Yes I am very blessed to have such a close knit family, we really are very close.

Tuesdays are typically spent at my uncle and Aunts(my next door neighbor) and Thursdays are at my house.

This week we made a change do to work schedules, my mom had to work on Thursday but was off on Tuesday so there you go.

Do you like crescent rolls? Yes, yea me too… you will want to take note of this recipe then

Alright here it goes

Ingredients:

  • Chicken breast
  • Crescent rolls
  • Cream cheese
  • Shredded cheddar cheese
  • Salt
  • Pepper

Directions

  1. Boil chicken (this can be done night prior) approx 30 minutes on medium to high heat… when chicken is cooked through and can be shred
  2. Shred chicken

5 Layer burrito

Oh my goodness so I have always loved the 7-layer burrito from Taco bell but by the time I finish customizing my burrito it is a 5 layer burrito. Well I found a fantastic blog full of yummy recipes, I kept reading and marking down recipes I wanted to try. Go here to see her awesome content– Carlsbad cravings!

She had a recipe for the Best Beef and Bean burritos– this caught my attention and I tweaked it ever so slightly and made it my own 5 layer burrito!

Here is my version

Ingredients:

  • 6 flour burritos
  • 1 lb ground chuck
  • 1 16 oz can of refried beans
  • 1/2cup shredded cheese
  • taco seasoning
  • 4 garlic cloves minced
  • 1 small onion diced finely
  • 1/2 can green chilies
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 dried oregano
  • 1/4 cup of heavy cream
  • 1/4 cup picante salsa
  • 1/4 cup red enchilada sauce
  • cheese sauce(see recipe below)

Directions:

  • over medium heat saute garlic, onion, green chilies and seasoning(oregano, salt and pepper) cook until tender
  • remove from skillet and in the same skillet cook ground chuck
  • after the ground chuck is completely cooked through add taco seasoning
  • add to the skillet the onion mixture and stir in
  • add the can of refried beans and cook through
  • add the salsa, cream and enchilada sauce
  • cook through
  • heat flour tortillas so they are flexible
  • place a spoonful(1/4 cup) of Mexican rice, use your favorite recipe– I used my moms secret family recipe(no it is a secret because there is not a recipe it is just thrown together– one day I will get around to watching her make it and write a recipe down) 🙂
  • place a spoonful(1/4 cup) of the beef and bean mixture
  • sprinkle shredded cheese
  • fold up burrito style and place on a shallow baking pan(seam side pan side down)
  • bake in a 375 oven until golden brown(approx. 5-10 minutes)
  • remove and plate
    • on plate place a 1/4 cup of rice on plate
    • place burrito on top of rice
    • cover with cheese sauce(recipe below)
    • sprinkle green onions, place a dollop of sour cream, salsa, guacamole on top
    • enjoy
  • this recipe makes 6-8 burritos but if you are just cooking for 2 these burritos are amazing warmed up as leftovers for lunch or dinner the following days

 

Cheese sauce recipe

Ingredients

  • 1 mini block Velveeta cheese
  • 2 tablespoons butter
  • 1/2 cup milk
  • 4 tablespoons of red enchilada sauce

Directions

  • slice cheese and butter place in microwavable safe bowl
  • add milk and enchilada sauce
  • microwave 45 seconds
  • remove and stir
  • microwave in increments of 45 seconds until your cheese is completely melted and cheesy
  • This will be very thin and you want it that way because as it sits and rests it will become a bit thicker
