Well not exactly… as I sit here typing out this post the weatherman says we are anticipating a snow storm for the weekend… uuggghh😔

Anyway whether it snows or not Ruby Ribbon Spring has sprung and once again it is amazing😍

Homemade in minutes

Maybe I should say simply homemade (who remembers the show on food network?) Since this is not 100% homemade.

After a busy week and a long work day the last thing you want to do is to slave over a hot stove, them eat dinner, then clean the kitchen…. nope doesnt sound like my kind of evening.

Instead of giving in and ordering take out, getting fast food, we decided to fix a home cooked meal and it took literally 30 minutes from start to finish.

Salisbury steak and mashed potatoes

Ingredients:

  1. 1 lb ground sirloin
  2. 1/2 onion diced
  3. 1 tablespoon veg oil
  4. 1/3 cup Italian bread crumbs
  5. 1 egg
  6. 2 cloves garlic minced
  7. 2 tsp Montreal steak seasoning
  8. 1 tbsp Worcestershire sauce
  9. 1.5 cups beef broth

Create Salisbury steak

  1. In a large mixing bowl mix the ground sirloin, egg, breadcrumbs, Worcestershire sauce, Montreal steak seasoning, garlic
  2. Divide the meat into 4 equal parts
  3. Make out 4 patties

Instant pot time

  1. Turn it on to saute
  2. When hot place 1 tbsp of oil in pot
  3. Do not bother them leave them for 3 minutes
  4. Turn the steaks and repeat step 3
  5. Remove steaks
  6. Place onion in pot(yes it will have steak residue this is a good thing)
  7. Saute onion for 4 minutes
  8. Add beef broth
  9. Place the simmer basket(or the shelf that comes with some)
  10. Place the steaks inside a foil basket on top of the shelf
  11. Put the lid on and turn to pressure cook for 5 minutes
  12. While this is cooking make mashed potatoes(used instant… love instant potatoes especially with rich gravy)
  13. Mashed potatoes take 5 minutes in microwave
  14. Instant pot goes off let it naturally release for 5 minutes then manually release pressure
  15. Take the foil out leave any juice in the instant pot
  16. Add cornstarch and stir this will instantly thicken to become gravy
  17. Serve on top of a bed of mashed potatoes and drizzle gravy on top

ou can of course make yummy real mashed potatoes if you wish and have time but the instant ones work perfectly with this dish especially doctored up like we did!

Cooking with Aldi

Yes a brand new Aldi just opened in my hometown, and I am in love!!!

I decided to cook a meal completely from Aldi and it was awesome!!!

The broccoli Augratin stuffed chicken breast and roasted tomato pesto tossed cheese tortellini was super easy to make

Remove the chicken from the package cut in 1 inch slices and place on plate put a damp towel on top and microwave for 3 mins

Boil salted water add pasta and boil for 3 mins. Remove from heat and drain

Add half a jar of tomato pesto and toss

Put half pasta on a plate and the other half on the second plate

Place sliced chicken on top and cover with cheese or alfredo sauce(we had ot left over)

I will definitely buy this again for a super easy and delicious dinner

The Joy of a gig job

So, we all could use extra money… if we really think about it, no matter how rich someone is they could always use and want more!!! That is the crazy thing about money and the reason money doesnt bring true happiness.

Anyway back to the subject at hand😂

I went to school to be a medical coder, got redirected for 7 years to be a medical coding instructor at a local junior college(I loved my job, but always wanted more, I longed to be in the medical field) I left teaching full time to be a Compliance officer and medical auditor at a very large Medical organization in town, still teaching part time for the college online.

I absolutely LOVE my job it is my dream job!!!! The fact I can still teach makes it that much better😍 But even though it is my dream job it is still a job something that I have to go to everyday and work, It helps that I love what I do but it is a job.

To have something that brings in extra income but is fun to do, something that doesn’t feel like work is a gig job or some like to call it a side hustle.

I think that gig jobs are important to have(I will explain later)

Personally I have 2 gig jobs and I love them too

1st is I am an Independent stylist with Ruby Ribbon

I worked hard my first year in business(5 years ago now) and became the youngest leader and the very first leader in WV, I loved having a team, helping them achieve their goals and in turn achieving my goals! Then you could say life got in the way, I went back to school to get my Masters degree, I took a step back from my RR business(this is something that you cannot do in a traditional 9-5, corporate America job without facing some sort of consequences.) I loved that if I needed more money a certain month, I could work my business by simply sharing the amazing products then if I needed time off, well I could take it without asking or telling anyone😊

I don’t see myself ever quitting Ruby Ribbon, this is a business…a gig job I will always have❤ even though at this time I don’t want to build a team and climb the ladder to director, I still want to be a part of Ruby Ribbon, and I can do that, and if my plans change and I decide to build and grow and climb the ladder I can do that too!!!

Now doesn’t it look like lots of fun? To be a Ruby ribbon stylist!!! well, it really is but, more than that as a Riby Ribbon stylist we give the gift of a bra free confident life🎁❤ being a Ruby Ribbon stylist is very rewarding!

Some may think that one gig job is enough.  well not me 😂 for my 2nd gig job I own and operate my own business “Creative Corner Designs by Danielle” a mother-daughter ran business selling handmade stickers, home decor, scrapbooking and planner items, jewelry and greeting cards all handmade by us in our home studio❤

I love creating and crafting after work, running my etsy shop allows for me a creative outlet and quality time with my mom too(its a win win)😊

I have had my shop for 10 years, not always working it but it has been a source of extra income for my family for 10 years.

Doesn’t that look fun?

Yes it is a lot of fun, does not feel or seem like work, feels like we are getting to have a craft party everyday and I LOVE it!!!

The importance of a gig job is to not only offer you and your family extra income but also to give you a release from your 9-5 corporate job, whether that release be creative, rewarding, fun or all of the above!!! It is important when searching for a gig job you find one that is flexible with your schedule, one that you can work from home or anywhere you may be, and one that you can be your own boss!

Direct sales industry is great for gig jobs, running your own business can be if your business is based around your hobby(running your own business is time consuming and can feel more like work than a direct sales business can). Remember that when searching for work at home jobs to beware of scams. Think about vacations or home renovations you want to do in 2019, how much extra money would you like to see each week, month and year… you can do it with a gig job!

Are you having pork and cabbage today?

So growing up we always had cooked cabbage and pork for dinner on New Years day. The day was spent at home relaxing after the busiest of Holidays and the late night before!

This year is no different in our home we are in deed having pork and cabbage

our New Years Day menu

  • Honey baked ham
  • scalloped potatoes
  • green beans
  • cole slaw
  • batter bread (this is another tradition in itself)

So Why do we eat this every year?

Well it is a tradition that has long been in my family(most of which don’t hold to it anymore some eat pinto beans and cornbread while others go completely non-traditional)

Pigs have been long looked at as good luck charms so eating pork on the first day of the new year is meant to bring good luck the whole year. cabbage is looked at like money and to eat it on the first day of the new year will bring you good fortune for the year to come. Now has it worked as of yet…. maybe not but it is always fun to stick with traditions and think about the lots of money you will be making because you ate cabbage on New Years day!

So excited to make and eat yummy food😍

Pizza dip

Ingredients:

  1. 1 10 inch cast iron skillet(rubbed down with olive oil)
  2. 1 stick of softened cream cheese
  3. 1 cup mayonnaise
  4. 1.5 cup mozzarella cheese
  5. 1.5 cup parmesan cheese
  6. .5 cup pizza sauce
  7. Pepperoni (6-8 slices)
  8. 2 tsp.Garlic powder
  9. 2 tsp Italian seasoning
  10. 2 tsp crushed red pepper
  11. Frozen dinner rolls(my favorite is Rhodes Rolls)
  12. 1 stick melted butter

Directions

  1. In a medium mixing bowl… mix the following; 1 stick cream cheese, 1 cup mayonnaise, 1 tsp garlic powder, 1 tsp Italian seasoning, 1 tsp crushed red pepper (dont put all seasoning in you need it later), 1 cup mozzarella cheese, 1 cup parmesan cheese
  2. Cut thawed rolls into 4 equal pieces roll in balls
  3. Melt stick of butter, add remaining seasonings
  4. Dip rolls in seasoned butter and place around perimeter of skillet(making 2 rows deep and 2 high)
  5. Leaving the middle open
  6. Bake rolls
  7. Place half cream cheese mixture in center put pizza sauce and then the other half cheese mixture
  8. Sprinkle top of cheese mixture with remaining mozzarella cheese and place pepperoni on top
  9. Sprinkle tip of rolls with remaining parmesan cheese
  10. Bake skillet
  11. Careful when removing from oven very hot and heavy
  12. Serve warm with rolls to dip

Cheesy bacon pull apart bread

Ingredients:

  1. Ball of bread(sourdough, white, any ball)
  2. 10 slices of cooked bacon chopped
  3. 4 green onions sliced (can also use chives if you wish)
  4. 1 cup shredded cheddar cheese
  5. 1 packet of ranch dressing mix

Directions:

Hot pepper dip

Ingredients:

  1. 1 stick cream cheese softened
  2. 1 cup banana pepper rings chopped
  3. 1 can green chilies
  4. 1 tsp garlic powder
  5. 1 tsp salt
  6. 1 tsp black pepper
  7. 1 cup mayonnaise
  8. 1 sleeve townhouse or Ritz crackers
  9. 4 tablespoons butter melted

Directions:

Mini Croque Monsieur

Ingredients:

  1. 1 french baguette cut at an angle (9 sandwiches)
  2. 2 tbsp butter
  3. 8 slices smoked ham
  4. 8 slices gouda cheese
  5. 1 cup bechamel sauce see below

Bechamel sauce

  1. 3 tbsp butter
  2. 3 tbsp flour
  3. 3 cups cold milk
  4. 1/8 tsp nutmeg grated
  5. Salt and pepper to taste
  6. 1/2 cup parmesan grated

Directions:

Making the sauce

  1. In a sauce pot melt butter add flour whisk on med-low heat add milk and stir
  2. When sauce thickens add parmesan cheese
  3. Add nutmeg and turn off heat

Making the Sandwich

  1. Butter one side of sandwich bread with butter
  2. Flip bread over and place 1 slice of cheese, 1 slice of ham
  3. On the other piece of bread spread bechamel sauce on top and press sauce side down on other piece to make the sandwich
  4. Repeat until all sandwiches are made
  5. In a cast iron skillet place sandwiches, place a tablespoon of butter and heat on stove top until golden brown (placing a weight on top
  6. When bread is toasted on both sides and sandwiches are cooked through remove from heat
  7. Place sandwiches on a cookie sheet
  8. Put 3 tablespoons of bechamel sauce on top of each sandwich
  9. Cook in oven on broil 3-5 mins

Pizza rolls

This is a savory version of cinnamon rolls(not really but kind of😂 read the recipe) it is guaranteed to be a hit with everyone at the party!!!

Ingredients

  1. Pizza crust frozen
  2. 1 cup pizza sauce(you will need the whole jar)
  3. 1 1lb sausage cooked and crumbled
  4. Pepperoni chopped
  5. 1.5 cup mozzarella cheese
  6. .5 cup parmesan cheese
  7. 1 tsp Italian seasoning
  8. 1 tsp garlic powder
  9. 1 tsp crushed red peppers

Directions:

  1. Roll out pizza crust to 9×16
  2. Put 1 cup pizza sauce on pizza all the way to the edge(just about)
  3. Sprinkle mixed seasoning and parmesan cheese
  4. Sprinkle sausage and pepperoni
  5. Sprinkle 1 cup mozzarella cheese
  6. Roll up jelly roll style
  7. Cut like you do cinnamon rolls
  8. Place in greased pan
  9. Bake rolls
  10. Sprinkle half cup cheese on top
  11. Return to oven and bake until bubbly and golden brown
  12. Serve warm with remaining pizza sauce
