Grief is a funny thing

No but seriously it really is… one day you can be perfectly fine and the next day you are a tear filled mess, maybe it is even as quick as moment to moment.

Why is it that some experience great loss while others seem to never experience loss? Good question and one that I dont think will be answered here on earth.

So people grieve differently some grieve publically while others (like myself) grieve very privately. For me it is such a private thing… it is something that I can do alone without many watching or hovering over me giving me a lot of unnecessary attention. (Contrary to popular belief, I cant stand attention, negative… positive, I want to fade into the background).

22 years ago I was 10 years old when God called my Dad home. The absence of my dad hurts more today than it did all those years ago. I was just a child, not truly understanding the magnitude of him making his trip to heaven.

I know that I grew up very fast and since it was just my mommy and me we became so close and she taught me how to be an independent woman. By independent knowing how to take care of myself without a man, work pay bill’s, cook, clean, change lightbulbs, be the handyman around the house.

I am beyond thankful for that because today 22 years later I can say that I am a strong Indepedent woman(not independent from God… please understand that I am 100% dependent on God… but for earthly things I am independent😁 I can take care of myself and I transitioned from adolescent to adulthood smoothly and almost effortlessly.

The public type grievers are somewhat annoying to me, and maybe it is because I am somewhat jealous, 10 years old and yes they were 10 precious years that I will forever treasure but only 10 years… most of the time public grievers had much more time than that so there are photos, videos and memories that well I just dont have. To beat all I dont have many photos because he was always behind the camera…😥

So I recently had a friend tell me that it was easier for me since I wasn’t grown, I hadn’t had the vision of my dad walking me down the aisle and well I was just a kid, that those that loose their dad in adulthood it is harder. WOW…really?!?!? well I am glad that they thought so… but I had visions of my dad walking me down the aisle even at 10, I wanted him to also take my wedding photos and I distinctly remember trying to figure out how I was going to make that happen, how would he walk me down the aisle and take pictures😁

I think no matter your age when you lose a loved one and no matter how the loss happens it is going to be hard just the same, and time doesnt heal it just helps you to deal, the hurt never goes away.

I will say though when a child like myself looses a loved one like a parent it is so hard because all of the milestones are then missed: elementary middle school, high school, undergrad, grad school graduation, drivers license, first job, and so many more.

Gone is gone no matter how it happened!!!

I think people expect me to be okay, and if they knew that I was sad they would be surprised… it is because of the Lord with the help of my church family that I am able to be happy on the outside😊

It is truly the weirdest feeling to be happy and joyful on the outside but falling apart on the inside…this has become our new normal.

Grieve how you need to grieve… and remember that no 2 people are going to grieve the exact same way…All I can ask is to not forget it will be the best most supportive thing you can do is NOT forget!!!

God will take our mess and turn it into His message he will take our storm and turn it into a rainbow

Cling to the only anchor that can help… Jesus!!! He will whisper sweet peace to thee❤

This was a very personal blog post(not usually this heavy) hopefully it will help someone to know you aren’t alone… and remember the God of the Mountain is still God in the Valley!!!

Leave a little sparkle where you go

So many years when I opened my ETSY store, I really didnt have a plan(which could be a good reason why it never made it off the ground, well past a jump🤣)

I opened my shop in March of 2008 oh my goodness 11 years ago this year and over the past 11 years I have been a little bit of everything in my shop.

I started put selling handmade greeting cards, after my family begged me to do so😊 then I began dabbling in hand crafted jewelry, my favorite being these neat glass tiles with Japanese foil papers(oh so pretty) I was making accessories for the everyday woman

One order of glass tiles had scrabble tiles and I thought it was a mistake but I researched it and sure enough it was a thing😮

I made mine different with a screwed in bail leaving the entire letter exposed, I sold several never consistent but yes I sold some

So then came stickers and man oh man that was a game changer… I have always loved stickers, paper, pens, sparkle, crafting so why not?


decided that since I have landed my dream job as a medical coder, auditor, compliance specialist, still a college teacher, I have achieved my masters degree and credentialed as much as I want I am going all in with my ETSY shop!!!

What does that mean?

Everyday working my day job coming home to work in the creative corner gives me a creative release!

I am determined to make my shop a success this year💖

I am continually researching the market and adding new fun things to the shop

My newest addition are these super cute planner charms and clips

Homemade tomato soup in a flash

With the instant pot you can have homemade tomato soup really quick!!!


  1. Large box tomato sauce(like chicken broth comes in only its tomato sauce)
  2. Large can of pureed tomatoes
  3. 1 medium onion diced
  4. 4 Clove of garlic
  5. 4 cups of chicken broth
  6. .5 cup heavy cream
  7. 1 cup parmesan
  8. Mozzarella to garnish
  9. Pesto to top soup(really gives the soup a tangy taste😊)completely optional if you dont like pesto leave this off
  10. Seasoning: salt and pepper to taste, 2 teaspoons Italian seasoning, 1 teaspoon crushed red pepper(more for spicy soup)
  11. 1 tablespoon of olive oil


  1. Turn instant pot on to saute with olive oil
  2. Put onion and garlic in the pot cook until clear and tender
  3. Add chicken broth and seasonings
  4. Add tomato sauce and puree
  5. Stir
  6. Put lid on and set to pressure cook 5 minutes
  7. Let naturally release for 15 minutes
  8. Manually release the rest about 5 minutes
  9. When the pressure pin is down open instant pot
  10. Add .5 cup of heavy cream stir cream into bubbly soup
  11. Add 1 cup parmesan cheese, stir melting into soup
  12. Serve immediately with garlic bread, grilled cheese, or whatever you like
  13. For a little switch I love to add cheese tortellini
  14. Place a .5 cup if cooked cheese tortellini in bottom of bowl
  15. Ladle soup over the tortellini
  16. Garnish with mozzarella cheese and pesto for a yummy treat

Enjoy your yummy tomato soup in a flash with your instant pot and ingredients from your pantry

Putting a spinning leftover tacos

I love eating tacos left over, and can several days after the original dinner without complaint.

But when you are just craving something different here is a neat idea that ended up being really good!!!

Taco roll ups


  1. Left over taco meat
  2. Left over beans
  3. Left over rice
  4. Tube of crescent rolls
  5. Cheese(I used spicy pepper jack and Mexican cheese blend)
  6. Sour cream
  7. Queso
  8. Quacamole
  9. Salsa
  10. Lettuce
  11. Tomato
  12. Green onion


  1. Open the Crescent rolls onto wax paper
  2. Separate rolls into triangles
  3. Spread sour cream on crescent roll
  4. Place a spoon full of meat, beans, cheese, rice
  5. Fold up sides of roll and roll up
  6. Place on greased cookie sheet
  7. Bake in 350 degree oven 15 minutes or until golden brown
  8. Take out of oven and top with queso, guacamole, lettuce, tomato, onion and any other topping

Try this next time you have left over tacos for a completely different flavor

Homemade in minutes

Maybe I should say simply homemade (who remembers the show on food network?) Since this is not 100% homemade.

After a busy week and a long work day the last thing you want to do is to slave over a hot stove, them eat dinner, then clean the kitchen…. nope doesnt sound like my kind of evening.

Instead of giving in and ordering take out, getting fast food, we decided to fix a home cooked meal and it took literally 30 minutes from start to finish.

Salisbury steak and mashed potatoes


  1. 1 lb ground sirloin
  2. 1/2 onion diced
  3. 1 tablespoon veg oil
  4. 1/3 cup Italian bread crumbs
  5. 1 egg
  6. 2 cloves garlic minced
  7. 2 tsp Montreal steak seasoning
  8. 1 tbsp Worcestershire sauce
  9. 1.5 cups beef broth

Create Salisbury steak

  1. In a large mixing bowl mix the ground sirloin, egg, breadcrumbs, Worcestershire sauce, Montreal steak seasoning, garlic
  2. Divide the meat into 4 equal parts
  3. Make out 4 patties

Instant pot time

  1. Turn it on to saute
  2. When hot place 1 tbsp of oil in pot
  3. Do not bother them leave them for 3 minutes
  4. Turn the steaks and repeat step 3
  5. Remove steaks
  6. Place onion in pot(yes it will have steak residue this is a good thing)
  7. Saute onion for 4 minutes
  8. Add beef broth
  9. Place the simmer basket(or the shelf that comes with some)
  10. Place the steaks inside a foil basket on top of the shelf
  11. Put the lid on and turn to pressure cook for 5 minutes
  12. While this is cooking make mashed potatoes(used instant… love instant potatoes especially with rich gravy)
  13. Mashed potatoes take 5 minutes in microwave
  14. Instant pot goes off let it naturally release for 5 minutes then manually release pressure
  15. Take the foil out leave any juice in the instant pot
  16. Add cornstarch and stir this will instantly thicken to become gravy
  17. Serve on top of a bed of mashed potatoes and drizzle gravy on top


ou can of course make yummy real mashed potatoes if you wish and have time but the instant ones work perfectly with this dish especially doctored up like we did!

Cooking with Aldi

Yes a brand new Aldi just opened in my hometown, and I am in love!!!

I decided to cook a meal completely from Aldi and it was awesome!!!

The broccoli Augratin stuffed chicken breast and roasted tomato pesto tossed cheese tortellini was super easy to make

Remove the chicken from the package cut in 1 inch slices and place on plate put a damp towel on top and microwave for 3 mins

Boil salted water add pasta and boil for 3 mins. Remove from heat and drain

Add half a jar of tomato pesto and toss

Put half pasta on a plate and the other half on the second plate

Place sliced chicken on top and cover with cheese or alfredo sauce(we had ot left over)

I will definitely buy this again for a super easy and delicious dinner

The Joy of a gig job

So, we all could use extra money… if we really think about it, no matter how rich someone is they could always use and want more!!! That is the crazy thing about money and the reason money doesnt bring true happiness.

Anyway back to the subject at hand😂

I went to school to be a medical coder, got redirected for 7 years to be a medical coding instructor at a local junior college(I loved my job, but always wanted more, I longed to be in the medical field) I left teaching full time to be a Compliance officer and medical auditor at a very large Medical organization in town, still teaching part time for the college online.

I absolutely LOVE my job it is my dream job!!!! The fact I can still teach makes it that much better😍 But even though it is my dream job it is still a job something that I have to go to everyday and work, It helps that I love what I do but it is a job.

To have something that brings in extra income but is fun to do, something that doesn’t feel like work is a gig job or some like to call it a side hustle.

I think that gig jobs are important to have(I will explain later)

Personally I have 2 gig jobs and I love them too

1st is I am an Independent stylist with Ruby Ribbon

I worked hard my first year in business(5 years ago now) and became the youngest leader and the very first leader in WV, I loved having a team, helping them achieve their goals and in turn achieving my goals! Then you could say life got in the way, I went back to school to get my Masters degree, I took a step back from my RR business(this is something that you cannot do in a traditional 9-5, corporate America job without facing some sort of consequences.) I loved that if I needed more money a certain month, I could work my business by simply sharing the amazing products then if I needed time off, well I could take it without asking or telling anyone😊

I don’t see myself ever quitting Ruby Ribbon, this is a business…a gig job I will always have❤ even though at this time I don’t want to build a team and climb the ladder to director, I still want to be a part of Ruby Ribbon, and I can do that, and if my plans change and I decide to build and grow and climb the ladder I can do that too!!!

Now doesn’t it look like lots of fun? To be a Ruby ribbon stylist!!! well, it really is but, more than that as a Riby Ribbon stylist we give the gift of a bra free confident life🎁❤ being a Ruby Ribbon stylist is very rewarding!

Some may think that one gig job is enough.  well not me 😂 for my 2nd gig job I own and operate my own business “Creative Corner Designs by Danielle” a mother-daughter ran business selling handmade stickers, home decor, scrapbooking and planner items, jewelry and greeting cards all handmade by us in our home studio❤

I love creating and crafting after work, running my etsy shop allows for me a creative outlet and quality time with my mom too(its a win win)😊

I have had my shop for 10 years, not always working it but it has been a source of extra income for my family for 10 years.

Doesn’t that look fun?

Yes it is a lot of fun, does not feel or seem like work, feels like we are getting to have a craft party everyday and I LOVE it!!!

The importance of a gig job is to not only offer you and your family extra income but also to give you a release from your 9-5 corporate job, whether that release be creative, rewarding, fun or all of the above!!! It is important when searching for a gig job you find one that is flexible with your schedule, one that you can work from home or anywhere you may be, and one that you can be your own boss!

Direct sales industry is great for gig jobs, running your own business can be if your business is based around your hobby(running your own business is time consuming and can feel more like work than a direct sales business can). Remember that when searching for work at home jobs to beware of scams. Think about vacations or home renovations you want to do in 2019, how much extra money would you like to see each week, month and year… you can do it with a gig job!

Are you having pork and cabbage today?

So growing up we always had cooked cabbage and pork for dinner on New Years day. The day was spent at home relaxing after the busiest of Holidays and the late night before!

This year is no different in our home we are in deed having pork and cabbage

our New Years Day menu

  • Honey baked ham
  • scalloped potatoes
  • green beans
  • cole slaw
  • batter bread (this is another tradition in itself)

So Why do we eat this every year?

Well it is a tradition that has long been in my family(most of which don’t hold to it anymore some eat pinto beans and cornbread while others go completely non-traditional)

Pigs have been long looked at as good luck charms so eating pork on the first day of the new year is meant to bring good luck the whole year. cabbage is looked at like money and to eat it on the first day of the new year will bring you good fortune for the year to come. Now has it worked as of yet…. maybe not but it is always fun to stick with traditions and think about the lots of money you will be making because you ate cabbage on New Years day!
