With the instant pot you can have homemade tomato soup really quick!!!
Ingredients
- Large box tomato sauce(like chicken broth comes in only its tomato sauce)
- Large can of pureed tomatoes
- 1 medium onion diced
- 4 Clove of garlic
- 4 cups of chicken broth
- .5 cup heavy cream
- 1 cup parmesan
- Mozzarella to garnish
- Pesto to top soup(really gives the soup a tangy taste😊)completely optional if you dont like pesto leave this off
- Seasoning: salt and pepper to taste, 2 teaspoons Italian seasoning, 1 teaspoon crushed red pepper(more for spicy soup)
- 1 tablespoon of olive oil
Directions
- Turn instant pot on to saute with olive oil
- Put onion and garlic in the pot cook until clear and tender
- Add chicken broth and seasonings
- Add tomato sauce and puree
- Stir
- Put lid on and set to pressure cook 5 minutes
- Let naturally release for 15 minutes
- Manually release the rest about 5 minutes
- When the pressure pin is down open instant pot
- Add .5 cup of heavy cream stir cream into bubbly soup
- Add 1 cup parmesan cheese, stir melting into soup
- Serve immediately with garlic bread, grilled cheese, or whatever you like
- For a little switch I love to add cheese tortellini
- Place a .5 cup if cooked cheese tortellini in bottom of bowl
- Ladle soup over the tortellini
- Garnish with mozzarella cheese and pesto for a yummy treat
