Pizza Tortellini for two

It is so hard to fix just a small amount, really it is and even dinners for two tend to still leave you with leftovers for thr next day.

With Christmas and new years fast approaching the last thing I need is more food in the fridge that will more than likely get thrown out

So here is a fun twist on regular baked pasta… combining my two lives of pasta and pizza for that perfect weeknight comfort food!

Here is what you will need

Pizza Tortellini for two

Ingredients

  • 1 servings of three cheese tortellini cooked

  • .5 cup finely chopped onion

  • 2 minced garlic cloves

  • .5 cup parmasean cheese

  • 2 tablespoons banana pepper juice

  • 1 tablespoon of parsley

  • 1 tsp red pepper flakes

  • 1 tsp salt

  • 2 tbsp olive oil

  • 1 cup cooked Italian sausage

Directions

  • Cook tortellini according to package directions and drain pasta
  • In a non-stick skillet place 2 tablespoons of olive oil, garlic, onion, and seasoning(salt, red pepper, parsley) and cook until tender
  • Add onions mixture to drained pasta and stir in 1 cup of grated parmasean cheese
  • Add 2 tablespoons of banana pepper juice and toss with pasta
  • In your skillet brown sausage cooking through remove 1 cup for this dish reaerve the rest for another meal
  • Add marinara sauce
  • Simmer 5 minutes
  • add 2 tablespoons heavy cream
  • Add sauce to pasta and mix
  • Place pasta mixture in an 8×8 casserole dish
  • Cover with mozzerella cheese and top with pepperoni
  • Bake in a preheated oven 375⁰ for 15-20 minutes or until bubbly and golden
  • Serve with your favorite garlic bread and side salad

Winter gnocchi soup

Ingredients

  • 1 tbsp olive oil

  • 1 pound hot sausage

  • 1 medium onion diced

  • 1 cup celery diced

  • 1/2 red bell pepper diced

  • 6 cloves garlic

  • 1/4 tsp red pepper flakes

  • 1/3 cup all purpose flour

  • 2 tbsp cornstarch

  • 2 14.5 oz cans fire roasted tomatoes

  • 1 tbsp beef boullion

  • 1 tsp parsley

  • 1 tsp oregano

  • 1 tsp salt

  • t tsp pepper

  • 2 bay leaves

  • 1 cup parmesan cheese

  • 1.5 cans carnation evaporated milk

  • 1 pound gnocchi

Directions

  • In a large soup pot put the following in
    -olive oil, sausage, onion, celery, red bell pepper
  • Saute and cook over medium heat until sausafe is completely cooked (no pink)
  • Add garlic and red pepper flakes
  • In a bowl add beef broth and to it whisk in the flour and cornstarch
  • Add both cans of tomatoes
  • Add step 4 and 5 to the soup
  • Add 1 tbsp beef boullion
  • Add seasonings- parsley, oregano, salt and pepper
  • Add 2 bay leaves
  • Simmer for 15-20 minutes
  • Add 1 cup parm cheese
  • Add carnation milk
  • Add gnocchi
  • Let soup simmer for 20 minutes

Notes

  • you can use a submersion blender on the tomatoes so not to have large chunks of tomatoes
  • Serve with garlic bread

Gifts for crafters

I am a crafter and this list is dear to me… these are my top tools I cannot craft without

First up is the CRICUT

Oh my word what can I say about the cricut… I LOVE the cricut my love goes back years ago when I was blessed to be chosen to be a part of Cricut’s demo army when the gypsy and cricut cake were released…. oh the memories!

I LOVE the cricut and any crafter in your life will love a cricut too… I recommend a cricut explore air unless you are a fabric crafter then you would want the maker.

Next up is the best tape a crafter could ever ask for… the 3M taper runner is not small at all it is very large but worth the money and the size… for any papercrafter this is a must have

next up is some more adhesive… the absolute BEST glue you will ever find!!!

I was lucky enough to discover this gem right before Thanksgiving and I dont know how I ever crafted before!!! I mean the fine precision tip is the Best for those tiny cuts (the cuts you will make with your cricut!!!)

Not to mention… how cute is the bottle?

Next we have my favorite storage cart… once you gather all of these tools you will need a place to store them. This Lexington cart is the BEST, it even has an optional table top which covers the top basket but gives you extra workspace and protects the inside of that top basket.

You can place your cricut on top of this cart if you opt for the table top add on

The wheels make this cart mobile which is super nice.

Note: Recollections have more styles of carts available but Lexington is what I personally have.

Are you or do you know a card maker or a stamper? You will want to consider Copic markers. These are the BEST craft markers and allow you to create realistic effects on your designs by layering colors and real life like highlights! There are so many options for copic markers so make sure to check with your crafter.

Next up is a must have if you are a stamper and you use copic or want to start using copic markers.

stazon ink pad… creates crisp lines that are permanent and eliminates color bleeding.

This next one is so much fun and even if you dont play with vinyl you will want to try this at least once.

Infusible ink

This is unlike anything…. vinyl sits on top of the fabric while infusible ink goes into the fabric, like what you find in stores, creates a more professional look for your creations, it is very cool, you will want to try it out, believe me!

These tweezers are the BEST for paper crafters… pick up those tiny cuts and they will help you.add adhesive and create your projects, you will want to keep these handy(in your Lexington cart)

My list could probably go on and on I mean I didn’t even talk about paper but lastly my favorite scissors are Fiskar scissors… even if they say for fabric only, you never want to cut paper with scissors you cut fabric with but if you are just using them for your paper crafts these are perfect they are my FAVORITE brand of scissors

Easy Chicken Chilquiles

Oh my word my favorite… I know I know I say that a lot but honestly chiliquiles are my favorite and not all Mexican Restaraunts serve it, makes me sad… insert sad emoji.

Did you know that traditional chiliquiles actually have eggs in the dish most often it is made using fried eggs but sometimes scrambled eggs are used. This would be perfect for brunch

I have had it prepared this way only one time and it was really good bit normally I eat it for lunch or dinner and so no eggs.

I have been wanting to try to fix chiliquiles like my favorite Mexican restaraunt does. I have attempted this recipe 3 times. I guess it is true what they say 3rd times a charm and if at first you don’t succeed try try again.

Never give up on what you want to achieve… keep trying!!!

So here is my recipe it was so yummy

chiliquiles are a favorite of mine and now I can have them anytime with this amazing recipe thst took me three times to get just right!

Ingredients

  • 1 cup of shredded chicken

  • 1/2 medium onion diced

  • 2 tbsp olive oil

  • 1.5 cups medium salsa

  • 3tsp taco seasoning

  • 1 tbsp tomato paste

  • 1 package of crunchy taco shells

  • 2 cups cheese

  • white queso cheese

  • Garnish with cheese, green onions, lettuce, beans, sour cream, salsa…

Directions

  • In a medium non-stick stick skillet place olive oil in and saute onions until tender
  • Add taco seasoning, chicken, salsa, tomato paste
  • Simmer for 10 minutes
  • In a 8X8 pan lined with foil
    Break up the taco shells into chip sized pieces
  • Spoon over the chips half of the chicken mixture
  • Cover with half the cheese
  • Cover the cheese layer with more taco shells broken into chip pieces
  • Repeat with the other half of the chicken mixture and cheese
  • Place into a 425⁰preheated oven
  • Bake 20 minutes or until bubbly
  • Remove from oven and let stand 5 minutes
  • Plate over a bed of lettuce and drizzle white queso cheese on top
  • Garnish how you wish

Notes

  • You can use rotisserie chicken for an even easier meal
  • You can crush up taco shells to Sprinkle over thr top of chiliquiles

My Favorite Stocking Stuffers

Stuffing stockings are my favorite and getting my stocking first thing Christmas morning has always been my favorite! I can remember getting barbies, toothbrushes, toothpaste, jewelry, toys, of course lots of candy!!!

Nail polish is great… I love this brand… you can get this on their website Olive and June! This nail polish lasts a lot longer than regular nail polish, same quality as gel nails without the light or the time!

Papermate inkjoy gel pens are my favorite pens they are the quickest drying pens with no smudge no bleed through.

Fuzzy socks are the BEST especially of you are working from home as many are!

A prayer journal or devotional makes a wonderful stocking stuffer!

a manicure kit, one that can be tucked into a purse or bag for travel would make the perfect stocking stuffer

These sweet key ring bracelets are all the rage this season!

Well this toothbrush is well more advanced than what I got in my stocking growing up, and so affordable!

Every girl loves bath and body works or at least bath and body items like bath gel or lotion!

A fun crossbody is always a great gift for me this mini crossbody bag is GREAT and check out the price… wow!!!

Looking at those screens for hours can really put a strain on your eyes… these blue light filter glasses are THE GIFT we all want to receive!

Christmas Shopping

Probably one of my most favorite things to do and when I get to shop with my mom it is even better!!!

Today we set our alarms for 6, I was wide awake at 4 yea 4 AM but I do get up at 4 everyday through the week so perhaps that is why but also I was super excited!!!

We even went through our brand new dunking donuts to get some donut holes and a coffee and hot chocolate…

speaking of hot chocolate have you all tried those hot chocolate bombs? I mean they are all the rage this season…. I saw them posted online and of course thought we could try but the molds were sold out everywhere so we got cute gingerbread molds and came up with one well sort of…. bit at the end of all of the trouble we didn’t like the taste so oh well

Back to shopping my most favorite thing to do… you know some love it and others not so much…. I love it… everything about it.

my trunk is packed and so was my back seat and the front passenger floor!!! We had so much fun shopping for gifts. I mean giving is better than receiving isnt it? I love it 364 days a year I anticipate giving gifts.

Although 2020 has been different and will continue to be different it was super nice to be able to spend the day shopping with mom!!!

Mexican Rice Casserole

I love rice whether it is Mexican or white rice, brown rice, fried rice, cilantro lime, plain or dressed up… I love rice!!!!

This dish makes the perfect side dish to tacos, taquitos, chimichangas or you could make it a main dish! It is also a great dip with corn chips for the big game or a party!!!

Here is thr recipe

Mexican Rice Casserole

Ingredients

  • 1 cup refried beans

  • 1 small can (1 cup) enchilada sauce

  • 1 cup uncooked rice

  • 1/2 small can green chilies

  • 1/4 medium onion finely diced

  • 1 cup salsa

  • 1 cup shredded cheese(taco blend)

  • 1 cup white queso cheese

Directions

  • in a 8 inch baking dish spread the refried beans in the bottom
  • cover thr beans with 1 cup salsa
  • cover the salsa with 1/2 cup cheese
  • in a saucepan empty jar of enchilada sauce into pan, add onion bring to a rolling boil
  • add the cup of rice, stir, put lid on and remove from heat
  • let rice sit for 10 minutes and then fluff with a fork
  • immediately place all rice on top of the cheese, salsa, beans
  • pour white queso cheese over the rice
  • cover with 1/2 cup cheese
  • place in preheated 425⁰ oven
  • bake for 15-20 minutes or until golden brown and bubbly

Notes

  • You will want to warm the queso cheese dip up so it is thin and liquid form

Rotisserie Chicken Chimichangas

Eating at our local Mexican Restaraunt is probably one of my favorite places to eat out… 2020 has changed my perspective on a lot of things and eating out is one of them.

I want to share with my readers you dont have to sacrifice taste to cook at home

One of my favorite dishes is the chicken chimichanga’s

So here is my easy(and when I say easy I mean super easy) recipe that uses rotisserie chicken from the deli at the local grocery store

Rotisserie Chicken Chimichangas

Ingredients

  • 2 cups of shredded rotisserie chicken

  • 1 cup salsa

  • 3 tsp taco seasoning

  • 1/4 medium onion diced

  • salt to taste

  • 1/2 tsp garlic powder

  • 1/2 small can green chilies

  • 6 soft taco size tortillas

  • 1 tablespoon olive oil

Directions

  • In a nonstick skillet put olive oil in as well as the onion and garlic powder and salt saute until onions are tender and translucent
  • Add chicken, salsa, taco seasoning, green chilies stir
  • Simmer 20 minutes
  • Place 2 spoonfuls of chicken in the center of a tortilla and wrap up burrito style (make sure ends are tucked)
  • Place on a baking sheet with seam side down
  • Place in a 375⁰ preheated oven
  • Bake 15-20 minutes or until golden brown
  • plate on a bed of lettuce and shredded cheese
  • cover in cheese sauce(white queso cheese dip)

When ordering this dish out it is always served with rice and beans so how about a Mexican rice casserole check out my recipe here(it also makes a fabulous dip with corn chips)

Such a cute card

I was browsing Instagram this Sunday morning and saw a shaker card. Yes I have seen them before today… but today when I saw this one card it made me say hmmmm wonder if I can make a card like that.

I went directly to my craft room and got to work on my own design.

I am so excited with this card and I am now completely obsessed with making these adorable cards… I will be making more one for every occasion I am sure!

I made using my cricut, Hampton Arts stamps, bearly arts glue, beads, copic markers.

Easy Crockpot BBQ chicken

Indont know about you… but, I love crackpot meals!!!! Super easy for busy schedules.

Easy Crockett BBQ chicken

If you love BBQ you will love this quick, easy recipe

Ingredients

  • 3-chicken breasts

  • 1- 16 oz bottle root beer

  • 24 oz bottle of Sweet Baby Ray’s BBQ sauce

  • Toasted buns

Directions

  • In a crockpot, place chicken breasts(I sliced the chicken up in chunks)
  • Set the crockpot on low
  • Pour bottle of rootbear over chicken put lid on and allow to cook for 4.5 hours
  • Pour root beer off and shred chicken
  • Pour BBQ sauce over and mix thoroughly
  • Cook for 1 hour longer after you pour BBQ sauce over chicken
  • Scoop onto toasted buns and enjoy

Notes

  • sliced cheese is really good on these sandwiches
  • Coleslaw would be tasty on this sandwich
