Eating at our local Mexican Restaraunt is probably one of my favorite places to eat out… 2020 has changed my perspective on a lot of things and eating out is one of them.
I want to share with my readers you dont have to sacrifice taste to cook at home
One of my favorite dishes is the chicken chimichanga’s
So here is my easy(and when I say easy I mean super easy) recipe that uses rotisserie chicken from the deli at the local grocery store
Rotisserie Chicken Chimichangas

2 cups of shredded rotisserie chicken
1 cup salsa
3 tsp taco seasoning
1/4 medium onion diced
salt to taste
1/2 tsp garlic powder
1/2 small can green chilies
6 soft taco size tortillas
1 tablespoon olive oil
Directions
- In a nonstick skillet put olive oil in as well as the onion and garlic powder and salt saute until onions are tender and translucent
- Add chicken, salsa, taco seasoning, green chilies stir
- Simmer 20 minutes
- Place 2 spoonfuls of chicken in the center of a tortilla and wrap up burrito style (make sure ends are tucked)
- Place on a baking sheet with seam side down
- Place in a 375⁰ preheated oven
- Bake 15-20 minutes or until golden brown
- plate on a bed of lettuce and shredded cheese
- cover in cheese sauce(white queso cheese dip)
When ordering this dish out it is always served with rice and beans so how about a Mexican rice casserole check out my recipe here(it also makes a fabulous dip with corn chips)
