I love rice whether it is Mexican or white rice, brown rice, fried rice, cilantro lime, plain or dressed up… I love rice!!!!
This dish makes the perfect side dish to tacos, taquitos, chimichangas or you could make it a main dish! It is also a great dip with corn chips for the big game or a party!!!

Mexican Rice Casserole

1 cup refried beans
1 small can (1 cup) enchilada sauce
1 cup uncooked rice
1/2 small can green chilies
1/4 medium onion finely diced
1 cup salsa
1 cup shredded cheese(taco blend)
1 cup white queso cheese
Directions
- in a 8 inch baking dish spread the refried beans in the bottom
- cover thr beans with 1 cup salsa
- cover the salsa with 1/2 cup cheese
- in a saucepan empty jar of enchilada sauce into pan, add onion bring to a rolling boil
- add the cup of rice, stir, put lid on and remove from heat
- let rice sit for 10 minutes and then fluff with a fork
- immediately place all rice on top of the cheese, salsa, beans
- pour white queso cheese over the rice
- cover with 1/2 cup cheese
- place in preheated 425⁰ oven
- bake for 15-20 minutes or until golden brown and bubbly
Notes
- You will want to warm the queso cheese dip up so it is thin and liquid form
