It is so hard to fix just a small amount, really it is and even dinners for two tend to still leave you with leftovers for thr next day.
With Christmas and new years fast approaching the last thing I need is more food in the fridge that will more than likely get thrown out
So here is a fun twist on regular baked pasta… combining my two lives of pasta and pizza for that perfect weeknight comfort food!
Here is what you will need
Pizza Tortellini for two

1 servings of three cheese tortellini cooked
.5 cup finely chopped onion
2 minced garlic cloves
.5 cup parmasean cheese
2 tablespoons banana pepper juice
1 tablespoon of parsley
1 tsp red pepper flakes
1 tsp salt
2 tbsp olive oil
1 cup cooked Italian sausage
Directions
- Cook tortellini according to package directions and drain pasta
- In a non-stick skillet place 2 tablespoons of olive oil, garlic, onion, and seasoning(salt, red pepper, parsley) and cook until tender
- Add onions mixture to drained pasta and stir in 1 cup of grated parmasean cheese
- Add 2 tablespoons of banana pepper juice and toss with pasta
- In your skillet brown sausage cooking through remove 1 cup for this dish reaerve the rest for another meal
- Add marinara sauce
- Simmer 5 minutes
- add 2 tablespoons heavy cream
- Add sauce to pasta and mix
- Place pasta mixture in an 8×8 casserole dish
- Cover with mozzerella cheese and top with pepperoni
- Bake in a preheated oven 375⁰ for 15-20 minutes or until bubbly and golden
- Serve with your favorite garlic bread and side salad
