You know those cold to the bone winter days the ones where everything you do to try to get warm just doesn’t work….
Well have i got just the recipe for you. This recipe will be just the thing that warms you right up
Winter gnocchi soup

1 tbsp olive oil
1 pound hot sausage
1 medium onion diced
1 cup celery diced
1/2 red bell pepper diced
6 cloves garlic
1/4 tsp red pepper flakes
1/3 cup all purpose flour
2 tbsp cornstarch
2 14.5 oz cans fire roasted tomatoes
1 tbsp beef boullion
1 tsp parsley
1 tsp oregano
1 tsp salt
t tsp pepper
2 bay leaves
1 cup parmesan cheese
1.5 cans carnation evaporated milk
1 pound gnocchi
Directions
- In a large soup pot put the following in
-olive oil, sausage, onion, celery, red bell pepper - Saute and cook over medium heat until sausafe is completely cooked (no pink)
- Add garlic and red pepper flakes
- In a bowl add beef broth and to it whisk in the flour and cornstarch
- Add both cans of tomatoes
- Add step 4 and 5 to the soup
- Add 1 tbsp beef boullion
- Add seasonings- parsley, oregano, salt and pepper
- Add 2 bay leaves
- Simmer for 15-20 minutes
- Add 1 cup parm cheese
- Add carnation milk
- Add gnocchi
- Let soup simmer for 20 minutes
Notes
- you can use a submersion blender on the tomatoes so not to have large chunks of tomatoes
- Serve with garlic bread
