For years well since we have lived on the family farm we all eat dinner as a family 2 days out of the week(not to mention sometimes we go out too). Yes I am very blessed to have such a close knit family, we really are very close.

Tuesdays are typically spent at my uncle and Aunts(my next door neighbor) and Thursdays are at my house.

This week we made a change do to work schedules, my mom had to work on Thursday but was off on Tuesday so there you go.

5 Layer burrito

Oh my goodness so I have always loved the 7-layer burrito from Taco bell but by the time I finish customizing my burrito it is a 5 layer burrito. Well I found a fantastic blog full of yummy recipes, I kept reading and marking down recipes I wanted to try. Go here to see her awesome content– Carlsbad cravings!

She had a recipe for the Best Beef and Bean burritos– this caught my attention and I tweaked it ever so slightly and made it my own 5 layer burrito!

Here is my version

  • 6 flour burritos
  • 1 lb ground chuck
  • 1 16 oz can of refried beans
  • 1/2cup shredded cheese
  • taco seasoning
  • 4 garlic cloves minced
  • 1 small onion diced finely
  • 1/2 can green chilies
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 dried oregano
  • 1/4 cup of heavy cream
  • 1/4 cup picante salsa
  • 1/4 cup red enchilada sauce
  • cheese sauce(see recipe below)

  • over medium heat saute garlic, onion, green chilies and seasoning(oregano, salt and pepper) cook until tender
  • remove from skillet and in the same skillet cook ground chuck
  • after the ground chuck is completely cooked through add taco seasoning
  • add to the skillet the onion mixture and stir in
  • add the can of refried beans and cook through
  • add the salsa, cream and enchilada sauce
  • cook through
  • heat flour tortillas so they are flexible
  • place a spoonful(1/4 cup) of Mexican rice, use your favorite recipe– I used my moms secret family recipe(no it is a secret because there is not a recipe it is just thrown together– one day I will get around to watching her make it and write a recipe down) 🙂
  • place a spoonful(1/4 cup) of the beef and bean mixture
  • sprinkle shredded cheese
  • fold up burrito style and place on a shallow baking pan(seam side pan side down)
  • bake in a 375 oven until golden brown(approx. 5-10 minutes)
  • remove and plate
    • on plate place a 1/4 cup of rice on plate
    • place burrito on top of rice
    • cover with cheese sauce(recipe below)
    • sprinkle green onions, place a dollop of sour cream, salsa, guacamole on top
    • enjoy
  • this recipe makes 6-8 burritos but if you are just cooking for 2 these burritos are amazing warmed up as leftovers for lunch or dinner the following days

Cheese sauce recipe

  • 1 mini block Velveeta cheese
  • 2 tablespoons butter
  • 1/2 cup milk
  • 4 tablespoons of red enchilada sauce

  • slice cheese and butter place in microwavable safe bowl
  • add milk and enchilada sauce
  • microwave 45 seconds
  • remove and stir
  • microwave in increments of 45 seconds until your cheese is completely melted and cheesy
  • This will be very thin and you want it that way because as it sits and rests it will become a bit thicker

Price is a relative term

“Oh that’s too expensive”

“Ooohhhh thst is pricey”

“I really like that….let me know when you have a sale”

“I am cheap I dont spend that kind of money on myself”

“I am a mom I never splurge”

If I hear any one of those one more time I may just scream out loud. Seriously I hear you!!!

Ruby Ribbon is by far the BEST brand of shapewear, bra replacements, swimwear, leggings, activewear, and career wear you are going to find… period.

Let me ask you a question… how much do you spend on bras? What about bathing suits, how much do you spend on leggings or career wear?

I would be willing to bet you spend more than you think you do!!! You would actually probably save money if you just bought Ruby Ribbon😁

For under 100.00 I can replace your bra, take up to 1 inch off your waist, smooth your back and side rolls, to be your tummy, and lift and separate your girls!!! I am pretty sure your Victoria’s secret can’t do all of that😂

You spend your money on what you want to spend it on… period. If you want a new car, new furniture, new decor from ikea, new bras and panties from Victoria’s secret guess what you dont have any issue pulling that credit card and swiping it you want it you buy it. Something new that well you may want and may like but you just dont want it bad enough you will say oh it is too expensive, I dont buy myself anything that pricey… well suit yourself it is your loss you aren’t experiencing freedom from your bra, you will continue to struggle to get into last seasons wardrobe and you will continue to wish you were thinner. while Ruby Ribbon Stylists and their very happy customers are living their best bra free life and loving every second of it❤

Think about this…

I began my career with Rubu Ribbon 5 years ago I still have my very first cami, my first pair of leggings and i still wear them(pretty sure your target leggings aren’t holding up for 5 years, and that Victoria’s secret bra yea it probably does good to last a season)

Buying Ruby Ribbon is not making a purchase it is making an investment

After awhile I wont ask you any more, I wont even offer my opportunity to you, believe me you want these opportunities offered to you(life-changing)

Have a good day… I dont want to hear it when your cheap underwire breaks and stabs you in the chest😂😖😫🤔😁

Do yourself a big favor and give Ruby Ribbon a try now!!!

The Village Inn

So there used to be this little restaurant at the base of town that was in my hometown during my young childhood years they served the BEST pizza breads and milkshakes ever!!! I have memories of my mom and me going to Village Inn drive through to get pizza breads and milkshakes

anyway when Village Inn closed down I have not been able to find another pizza bread quite like that one.

This is my attempt at making one and let me tell you I got pretty close but not quite there so I will continue working on my pizza sauce recipe(I will not be sharing that just yet) and see if we can get it closer!

So the other evening I made Philly Cheesesteak sandwiches and realized I had more bread left over so I decided to give pizza breads a whirl and here is what I came up with

  • Hoagie rolls
  • butter
  • 1 clove minced garlic
  • fresh mozzarella
  • parmesan cheese
  • pizza sauce(I made mine from scratch and one day I will share that recipe too but for now just use your favorite sauce)
  • Pepperoni(I used mini)
  • Turkey sausage (although you can use pork, but honestly I couldn’t tell a difference, believe me I would tell you if I could)

  •  preheat toaster oven
  • melt 4 tablespoons of butter(you can also use spray butter)
  • add minced garlic(if you use spray butter use garlic powder)
  • brush hoagie rolls
  • toast until golden brown
  • take out of oven
  • put 1 tablespoon of sauce on one side of hoagie and repeat on the other side(covering the bread more or less depending on your desired amount of sauce)
  • cut slices of fresh mozzarella and scatter on top of the sauce(this will not cover the bread or the sauce and that is okay
  • sprinkle sausage and peperoni(any other toppings you want)
  • place directly on the rack and bake until cheese is melted and gooey
  • remove and place pizza bread together
  • let rest for 1 minute
  • slice pizza bread in half
  • enjoy

Philly Cheesesteaks at home

Now I like to go out to a restaurant as much as the next person but let me just say after a long day at work there is nothing better than walking through your door knowing that you can get comfy and fix your own homemade dinner and be in for the evening(maybe I am getting old….LOL) Nah I like to go to but I love to be home!!!

So who doesn’t love a juicy Philly cheesesteak sandwich??? As I type this my mouth is watering thinking about it!

  • steak umms
  • 1/2 medium onion finely chopped
  • 1 green pepper finely chopped
  • Salt  to taste
  • Pepper to taste
  • 1 clove Garlic minced
  • Seasoning salt
  • Hoagie rolls
  •  4 tablespoons Butter(for the bread)
  • 1 clove Garlic minced(for the bread)
  • Provolone cheese
  • Condiments of your liking: lettuce, tomato, mayo, mustard, banana peppers…

  • Heat skillet over medium heat and add onions, garlic and pepper
  • Stir veggies up until cooked through and tender
  • Add steak on top(fixing two sandwiches I placed two steaks in the skillet) on top of the veggies
  • Salt, pepper to taste on the steak(I did both sides)
  • Turn so not to burn
  • Begin crumbling up the steak as it is cooking and stir
  • You will want it a little brown(this makes the steak crispy but not all of it should be crispy, unless that is how you like it)
  • Cook through
  • As your meat is cooking heat up your toaster oven
  • Melt 4 tablespoons of butter in microwave until butter is liquid(you can also use spray butter)
  • Add 1 clove of minced garlic to the hot butter
  • Brush hot butter on to each hoagie half
  • {lace the open hoagie in the toaster oven and toast until golden brown
  • Remove from oven
  • The meat should be cooked through now
  • Place 2 slices of provolone cheese on one half of the hoagie and a heaping spoonful of the meat on top(covering the bread/cheese)
  • Add any condiments that you may want: mayo, lettuce, tomato, peppers, mustard
  • Shut the sandwich and let rest for just a minute
  • Slice the sandwich in half and enjoy with potato chips, fries or a salad

I hope you enjoy this recipe let us know below if you decide to try it!
