Oh my goodness so I have always loved the 7-layer burrito from Taco bell but by the time I finish customizing my burrito it is a 5 layer burrito. Well I found a fantastic blog full of yummy recipes, I kept reading and marking down recipes I wanted to try. Go here to see her awesome content– Carlsbad cravings!
She had a recipe for the Best Beef and Bean burritos– this caught my attention and I tweaked it ever so slightly and made it my own 5 layer burrito!
Here is my version
Ingredients:
- 6 flour burritos
- 1 lb ground chuck
- 1 16 oz can of refried beans
- 1/2cup shredded cheese
- taco seasoning
- 4 garlic cloves minced
- 1 small onion diced finely
- 1/2 can green chilies
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 dried oregano
- 1/4 cup of heavy cream
- 1/4 cup picante salsa
- 1/4 cup red enchilada sauce
- cheese sauce(see recipe below)
Directions:
- over medium heat saute garlic, onion, green chilies and seasoning(oregano, salt and pepper) cook until tender
- remove from skillet and in the same skillet cook ground chuck
- after the ground chuck is completely cooked through add taco seasoning
- add to the skillet the onion mixture and stir in
- add the can of refried beans and cook through
- add the salsa, cream and enchilada sauce
- cook through
- heat flour tortillas so they are flexible
- place a spoonful(1/4 cup) of Mexican rice, use your favorite recipe– I used my moms secret family recipe(no it is a secret because there is not a recipe it is just thrown together– one day I will get around to watching her make it and write a recipe down) 🙂
- place a spoonful(1/4 cup) of the beef and bean mixture
- sprinkle shredded cheese
- fold up burrito style and place on a shallow baking pan(seam side pan side down)
- bake in a 375 oven until golden brown(approx. 5-10 minutes)
- remove and plate
- on plate place a 1/4 cup of rice on plate
- place burrito on top of rice
- cover with cheese sauce(recipe below)
- sprinkle green onions, place a dollop of sour cream, salsa, guacamole on top
- enjoy
- this recipe makes 6-8 burritos but if you are just cooking for 2 these burritos are amazing warmed up as leftovers for lunch or dinner the following days
Cheese sauce recipe
Ingredients
- 1 mini block Velveeta cheese
- 2 tablespoons butter
- 1/2 cup milk
- 4 tablespoons of red enchilada sauce
Directions
- slice cheese and butter place in microwavable safe bowl
- add milk and enchilada sauce
- microwave 45 seconds
- remove and stir
- microwave in increments of 45 seconds until your cheese is completely melted and cheesy
- This will be very thin and you want it that way because as it sits and rests it will become a bit thicker
