
It is getting that fall feel here, I don’t know about where you are but there is nothing better than a saucy pasta casserole to celebrate the chilly days.
I have seen recipes like this except they often use egg noodles and cottage cheese, I wanted to use rotini and I also cannot stand cottage cheese… like not even in lasagna, funny that people say “oh you cant tell the difference!” Oh but I really can.
Anyway, I redefined this recipe a bit by substituting rotini for egg noodles, ricotta for cottage cheese, and Italian sausage for ground beef. I of course had to share this recipe with you and hopefully you like it too!
Here is what you will need
Ingredients:
- 1 pound Italian sausage(mild or spicy is your choice)
- 30 oz tomato sauce
- salt and pepper
- 1 clove of garlic minced
- 1 medium onion diced
- 10 oz Rotini noodles
- 1/2 cup sour cream
- 1 cup Ricotta cheese
- 1 1/2 cup cheddar cheese
- 1/2 cup green onion chopped
Here is what you will do
Directions:
- Preheat oven 350 degrees
- brown sausage cook thoroughly
- add onion and garlic, salt and pepper
- cook through
- add tomato sauce to the sausage
- cook noodles until almost tender(the noodles will continue to cook in the oven)
- drain noodles and allow to cool
- mix sour cream, ricotta cheese and green onion add to cool noodles mix thoroughly
- grease a 9X13 casserole dish
- put half the noodle mixture in casserole dish
- top with half the sausage and tomato sauce mixture
- top with half the cheese
- layer the other half of noodles on top of the cheese
- layer the other half of the sausage and tomato sauce mixture
- top with remaining cheese
- place in preheated oven and bake for 20 minutes the cheese should be bubbly and golden brown
Serve dish with garlic bread and salad and enjoy
