2020 has caused us to do a lot of things we wouldn’t typically do, like cook everything at home.

I have loved every minute of experimenting in the kitchen and trying to develop new recipes!

So I keep seeing these advertisements for Popeyes chicken sandwich and you know the controversy that surrounds that don’t you?

Guess what I have never tried a popeyes chicken sandwich…gasp!!! I know it is crazy isn’t it, sadly we don’t have a Popeyes close to us.

I began looking for recipes for chicken batter and decided to give this one a try of course I made it my own

Restaurant quality chicken sandwich at home!

Ingredients

  • 2 chicken breasts cut in half

  • Canola oil 48 oz

  • Chicken marinade
  • 1 cup butter milk

  • 1 tsp paprika

  • 1 tsp Garlic powder

  • 1 tsp black pepper

  • 1 tsp salt

  • 2 cups of all purpose flour

  • 2 tablespoons cornstarch

  • 1 tsp paprika

  • 1 tsp Garlic powder

  • 1 tsp black pepper

  • 1 tsp salt

Directions

  • Place the cut chicken breast between parchment paper and pound out until 1/2 inch thick
  • Get a gallon zip lock bag open and put the contents of the marinade
    buttermilk, spices. Close the bag and shake well until everything is mixed properly
  • Add chicken breasts to the bag and let marinade for 24 hours
  • In a shallow dish whisk together the spices(paprika, garlic powder, salt and pepper) along with the flour and cornstarch
  • Remove the chicken from the bag and dredge in the flour, pressing the flour into the chicken
  • In a deep skillet or pan bring the canola oil to the temperature of 350 degrees
  • Gently place chicken in the hot oil and cook for 4 minutes
  • Then gently flip the chicken breast over in the hot oil and cook for another 4 minutes
  • Remove from oil lay on a towel to absorb the access oil
  • Toast your brioche buns
  • Dress the sandwich the way you like: I put a slice of cheese, spicy mayo, pickles. You can definitely put lettuce, tomato, onion, cheese, mayo, mustard, hot sauce, bbq… whatever you like!

Notes

  • Serve with french fries, salad, or potato chips and enjoy!
