Who doesnt love tacos but you can eat them for days(at least we can, my mom makes enough to feed an army🤣😂

So tonight we needed a quick meal before church and my mom knocked these out of the park… taco bell doesnt hold a candle to these crunch wrap supremes 😉

Ingredients

  1. 10 inch tortillas
  2. 8 inch tortillas
  3. Tostata shells
  4. Left over taco meat
  5. Left over refried beans
  6. Left over Mexican rice
  7. 1 small can of enchilada sauce (red)
  8. Queso cheese
  9. Shredded cheese
  10. Salsa, tomatoes, sour cream, lettuce, guacamole is optional

Directions

  1. Make sure the meat, beans, and rice are heated thorough
  2. Spread a generous layer of beans the size of the tostata shell in the middle of the large tortilla
  3. Layer rice on top of beans
  4. Place tostata shell on top
  5. Place meat on top of tostata shell
  6. Place a spoonful of enchilada sauce
  7. Top with shredded cheese
  8. Spoon full of queso cheese on top
  9. Cut medium tortilla in half
  10. Place half tortilla on top of cheese tucking the ends inside
  11. Fold over ends of large tortilla
  12. Place folded ends downside in hot skillet(no oil or butter)
  13. Fry until golden brown
  14. Turn/flip and brown other side
  15. Enjoy with whatever toppings you like
