So I dont know about you but taco nights are my absolute favorite because the left overs are soooooooo good!!!`So we started a new tradition last Christmas we make Tacos for Christmas dinner we loved it so much we continued it this year(man oh man were they good😋)What do you do when you have a ton of tacos left over and already had leftovers one night oh yea and company is coming over?You redefine your leftovers and make something new!!!Introducing taco mac casseroleIngredients•2 cups of elbow macaroni noodles• 1 1/2 lbs left over taco meat• 1/2 cup tostitos chips crushed•1/2 cup cheddar cheese• cheese sauce•• 1 lb velveeta cheese••1/2 stick butter•• cup of milk (you can add more for a thinner consistency)••1 tablespoon taco seasoning•Garnish••sour cream••lettuce shredded•• tomatoes•• green onions•• salsaDirections1. In a medium saucepan prepare the elbow pasta2. In a small saucepan over low heat melt butter, cheese, milk and taco seasoning together stirring constantly to avoid scorching4. Warm up the left over taco meat to loosen up5. Once pasta is finished cooking (al dente) drain, add cheese sauce and stir up, if too thick you may add more milk to thin out6. Stir in taco meat7. Place into a greased 9×13 casserole dish8. Top with 1/2 cup cheese and crushed tostitos chips9. Bake in 350 degree oven for 30 minutes10. Serve with lettuce, tomato, salsa, extra cheese, green onions, sour cream, guacamole(or eat on the side with chips😉)EnjoyLet us know if you will be trying out this recipe
