On a bitter cold winter evening there is just nothing better than a hot bowl of soup to warm you up❤

So tonight is that night!!!! When our temps didnt make it out of the 20s today, yes tonight is a perfect night for soup!

I love to experiment with recipes creating my own recipe

I had seen on instagram a yummy soup, called Lasagna soup, it intrigued me and I looked it up.

Using what I had on hand I created my own and it quickly became “baked Ziti” instead of “lasagna” soup

Recipe

Ingredients

  • 4 1/2 cups of chicken broth
  • 2 1/2 cups ziti noodles
  • 2 tablespoons of tomato sauce
  • 1 23.5 ounces prego italian sausage and garlic marinara
  • 4 cloves of garlic minced
  • 1 medium onion finely chopped
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon rosemary
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • If you do not have individual spices you can substitute 1 tablespoon italian seasoning
  • .5 pound italian sausage
  • .5 pound ground beef

Directions

  • In a soup pot place olive oil, onion and garlic in pan bring to a simmer and cook until tender and translucent
  • In same pan Brown meat
  • In a medium saucepan being water to boil to cook Ziti noodles
  • Once meat is browned add all dry seasonings and stir in
  • Add chicken broth, marinara, and tomato paste
  • Bring to a low boil and simmer for 20 mins
  • Add ziti noodles, stir and simmer till hot through
  • Make the ricotta garnish
  • Ladle hot soup into a soup bowl place a dollop of ricotta mixture and drizzle pesto(pesto is optional)serve immediately with garlic bread

Ricotta mixture

  • Ingredients
  • 8 ounces ricotta cheese
  • 2 cups mozzarella
  • 1/2 cup parmesan

Directions for ricotta

  • In a small mixing bowl mix cheeses together set in fridge till ready
  • Spoon a spoonful or two on top of piping hot soup and stir in to melt into the soup
