Mexican pizzas
Now let me start this post out by saying how big of a Taco Bell Fan I am and have always been. Mexican pizzas have always been a favorite of mine too.
Being in the safer at home quarantine season that we are in, I have been trying to come up with fun restaraunt recipes that I Love but don’t have frequent access during this time.
I bring you my version of the Taco Bell

Yes, we eat off paper plates, this is real life and rushing to get meals prepared on a weeknight after work, but as the gorgeous Tabitha Brown says thats my business
Anyway back to my recipe
Ingredient list
- Homemade flour tortilas (2 per pizza) or store Bought… homemade is always best though
- 2 Tbsp refried beans brand of your choice
- 2-4 tbsp taco meat
- 1/2 cup- 1 cup cheese per pizza
- 2 tbsp enchilada sauce per pizza
- 2 tbsp taco salsa per pizza(if you like chunky tomatoes on the pizza if not leave off)
- 2 tbsp vegetable oil
- Garnished with
- Fresh diced tomatoes
- Pico de gallo
- Sour cream
- Guacamole
- Green onions
Directions
- In a medium skillet heat 2 tablespoons of vegetable oil
- When oil is hot place a tortilla in frying for 1 minute, carefully flip tortilla and fry for 1 minute. Tortilla should be golden brown.
- Remove fried tortilla place in between paper towels to absorb excess oil
- Pre-heat oven 400⁰
- On a foil lined cookie sheet begin building your pizza
- Gently spread 2 tbsp of refried beans on the bottom shell
- Add 2-4(this is up to you) tbsp of taco meat spreading out evenly
- Sprinkle a little cheese
- Put the second shell on top
- Spread 2 tbsp enchilada sauce
- Cover top.with 1/2 cup cheese
- Bake 10 minutes or until cheese is melted and bubbly
- Remove from oven
- Place on plate(paper plates work fine)
- Garnish as you desire
- Enjoy
