I am always trying to make my left overs more interesting and exciting… never been a big fan of left overs so anything to make them more intriguing I am here for it

Sunday we had Mississippi pot roast mashed potatoes and green beans from the garden.

So for dinner on Tuesday we decided to warm up left overs

That is when I got excited and decided to experiment and came up with this tasty recipe I am ready to share with you.

Here is what you will need

Ingredients

  • 2 cups left over mashed potatoes warmed up
  • 2 cups of steamed broccoli florets
  • 2 tablespoons sour cream
  • 2 tablespoons butter(cut into small cubes or grated)
  • 1/4 cup Parmesean cheese
  • 2 cups cheddar cheese
  • 2 green onions sliced(half for garnish)
  • 2 slices bacon cooked
  • 2 teaspoons steak seasonimg
  • 2 teaspoons garlic powder or seasoning
  • 1/4 teaspoon cayenne pepper

Directions

  • Warm mashed potatoes in a large mixing bowl
  • Stir in sour cream
  • Stir in cubed butter
  • Stir in steak seasoning, garlic, cayenne pepper
  • Stir in cheeses 1 cup cheddar, 1/4 cup Parmesean
  • Stir in crumbled bacon
  • Stir in 1 diced green onion
  • Set to the side
  • Cook broccoli until tender
  • Drain broccoli
  • Stir cooked broccoli into mashed potatoes
  • Place in a 8×8 square cake pan
  • Cover with cheddar cheese
  • Bake in 375⁰ preheated oven 15 minutes or until cheese is melted and bubbly and heated through
  • Serve immediately, garnish with green onion
