I absolutely love pasta sucha comfort almost as if the meal reaches up and gives you a big hug and tells you thst you are good, you are loved and you are important!!!

I mean that may be a little on the dramatic side but I am no stranger to dramatics

Anyway so i.wanted to fix dinner and I wanted a big ole plate of hearty pasta and cheese

And came the idea to add broccoli

Here is the recipe

Ingredients:

  • 12 lasagna noodles cooked
  • 1 bunch of broccoli
  • 15 oz ricotta cheese
  • 1/2 cup parmasean cheese
  • 1/2 cup shredded mozzerella
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon parsley
  • 1/2 tsp red pepper flakes
  • 1 egg
  • 1 pint of marinara sauce use your favorite

Directions:

  • Cook lasagna noodles in generously salted water large pan
  • Cut broccoli into small pieces and cook 15-20 minutes or until tender
  • In a medium mixing bowl
    • Add ricotta cheese
    • Add Seasonings to ricotta cheese; salt, pepper, garlic, parsley, red pepper flakes
    • Crack an egg and beat into cheese and seasoning mixture
  • Drain broccoli, stir to break it into tinier pieces
  • Allow broccoli to cool
  • Drain lasagna noodles and lay on a single layer on tip of aluminum foil to cool
  • Once broccoli is cooled add to cheese mixture and mix thoroughly
  • Place 2 tablespoons on one lasagna noodle and evenly spread and roll up
  • In a casserole dish(9×13) cover the bottom with marinara sauce
  • Arrange lasagna rolls in pan seam side down
  • Cover top with marinara
  • Sprinkle the top with mozzerella cheese
  • Place in a preheated oven 375⁰ and cook 25 minutes or until cheese is melted and sauce is bubbling
  • Serve with coleslaw, side salad, and garlic bread
  • ENJOY!!!
