We had a restaraunt in town called Max ans Erma’s you may have heard of it or even been(so good)
They had Chicken Tortilla soup this is what I would get everytime I would go there
Then Max and Emma’s closed… I began searching for a chicken Tortilla soup recipe
Found an awesome recipe by Reed Drummond we changed it up.a bit and here it is
Chicken Tortilla soup

hourYummy Chicken Tortilla soup perfect for fall days
Ingredients
3 chicken breasts
10 cups chicken broth
1 can Rotella with tomatoes and green chilies
1 small can tomato paste
2 cans black beans drained
2 tsp chili powder
2 tsp cumin
1 tsp garlic powder
1 medium onion diced
salt and pepper to taste
2 tbsp olive oil
8 corn tortillas sliced
3 tbsp cornmeal
.5 Cup water
Directions
- Boil chicken and shred
- In a soup pot put olive oil and salt pepper snd onions and saute
- In a bowl Shred chicken and place all seasoning in the chicken; cumin, chili powder, garlic powder, salt, pepper stir to fully incorporate
- In soup pot add to the onions add chicken broth, tomato paste, Rotella, beans bring to a boil turn heat down
- Add chicken and simmer 30 minutes
- .5 cup of water stir in 3 tablespoons cornmeal
- Stir in cornmeal mixture into soup
- Cut tortillas in strips
- Add tortillas to soup right before serving
- Serve with cheese, sour cream, hot sauce, corn chips, cheese quesadila
- Enjoy
