I will give you something… one pan meal!!!

Everything you love about enchiladas and tortellini mashed up!

This one skillet meal is awesome, whether you are feeding a few or the entire family or inviting friends over!!!

Ingredients

  1. 8 oz three cheese tortellini
  2. 1 pound ground beef
  3. 1 cup beef broth
  4. 1 cup water
  5. 2 cups red enchilada sauce
  6. 1 can black beans, rinced and drained
  7. 2 cups cheese
  8. 1/4 cup sour cream
  9. 1/4 cup guacamole
  10. 2 green onions
  11. 1 tablespoon cilantro

Equipment

  1. Cast iron skillet 12 inch
  2. Spatula

Ingredients

  • 8 oz three cheese tortelini

  • 1 pound ground beef

  • 1 cup beef broth

  • 1 cup water

  • 2 cups enchilada sauce

  • 1 can black beans, rinsed and drained

  • 2 cups shredded cheese

  • 1/4 cup sour cream

  • 1/4 cup guacamole

  • 2 green onions

  • 1 tablespoon cilantro

Directions

  • Over medium high heat cook ground beef through(no pink) add taco seasoning
  • Remove beef and set aside
  • Add beef broth and 1 cup of water into cast iron skillet bring to a low boil
  • Add tortellini and cook all dented
  • Add taco meat, beans stir
  • Pour enchilada sauce over the top
  • Cover with cheese
  • Place in a preheated oven and broil 3-5 minutes (cheese should be bubbly and golden brown)
  • Remove and serve with sour cream and guacamole, green onions, cilantro
    Chips on the side
  • Enjoy

Notes

  • You can top your dish with whatever toppings you want
  • Mine was a little thin when I first made it, nothing tortilla chips couldn’t fix! Crush them up or ear alongside!
