scrolling through Pinterest looking for ideas I found this and tweaked it to a more manageable size, cooking for 2 doesn’t have to be difficult.

Here is what you will need

  • Tater tots
  • Breakfast sausage
  • Eggs
  • Peppers and onions
  • Seasonings
  • Cheese

Ingredients

  • 5 eggs

  • 1 cup half and half

  • .5 cup milk

  • 1/2 pound breakfast sausage

  • 1/2 green pepper diced

  • 1/2 red pepper diced

  • 1/2 medium onion diced

  • 1 cup sharp cheddar cheese

  • 1 cup pepper jack cheese

  • 1 package of frozen tater tots

  • Seasonings 1/4 tsp each
  • paprika

  • ground mustard

  • oregano

  • salt

  • pepper

  • garlic powder

Directions

  • in a large skillet brown the sausage crumble as
    It cooks
  • Add the peppers and onions once the sausage is cooked fully, saute until peppers and onions are tender
  • In a bowl whisk eggs half and half, seasonings and green chilies
  • in a greased 8X8 pan add a layer of tater tots
  • on top of thr tater tots add the sausage and peppers
  • add a layer of cheese half the cheddar and half thr pepper jack
  • pour egg mixture on top evenly
  • cover the top with another layer of tater tots
  • in a 350⁰ oven cook for 90 minutes
  • remove and Sprinkle the remaining cheese on top
  • bake an additional 10 minutes
  • serve with green onions, sour cream, salsa, your favorite toppings

Notes

  • you can prepare the night before
  • Whisk egg mixtureand place in air tight container in fridge
  • Cook sausage, pepper and onions and place in air tight container place in fridge
