Well I have just the soup for you!!!! Cabbage soup!
When I was little I can remembering going to this restaurant in Saint Albans West Virginia, called the rivers edge, what I can remember is we only went on special occasions and it was dark dimly lit with candles and round tables with comfy chairs. I also remember they had an upstairs I loved going upstairs to eat! What most stands out is when you would arrive and sit down shortly after a waiter would bring out tiny bowls of soup and hushpuppies, the soup was cabbage and as a child I never ate mine.
Growing up I can remember my mom talking to her friends about a diet soup and when they mentioned cabbage I hoped and prayed my mom wouldnt fix it.
These memories make me smile and laugh because I miss rivers edge(been closed for years) I just want to try that cabbage soup as my grown up palate has changed quite a bit! and I would love my mom to make cabbage soup now.
We were just discussing things the other day and in fact cabbage soup came up in our conversation. My mom asked if that would be something we could try for our weekly meal plan? I almost jumped out of my skin so excited I squeeled absolutely and then began to work on a recipe!
This recipe was a bit hard considering I had never had cabbage soup and it had been years since my mom had but we got to work brainstorming on ingredients and doing some recipe research on pinterest (yes a lot of my ideas are born by looking at pinterest then I make them my own!)
Here is what you will need
- Olive oil
- Chicken broth
- Stewed tomatoes
- Salt and pepper
- tomato juice
We got to work on making this soup and anxiously anticipated it being ready to eat!
As it simmered it smelled the whole house and not in a bad way it smelled so good, we could harldy wait till it was finished!
Cabbage SoupCourse: Recipe, Soup
2.5 tablespoons olive oil
1/2 head of cabbage chopped
3/4 cup of yellow onion chopped
2.5 cup chopped carrots
1 box chicken broth
1/2 cup chopped celery
14.5 ounces of stewed tomatoes
1 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves of minced garlic
- chop cabbage
- chop onion
- chop carrot
- chop celery
- mince garlic
- in a soup pot add olive oil and heat to a simmer
- add onions, carrots, and celery and cook until tender and translucent
- To the pot and cooked veggies add chicken broth simmer for 5 minutes
- Add cabbage, stewed tomatoes, salt pepper, thyme and garlic simmer for 45 minutes
- Add tomato juice
- Mozzarella cheese is a great topping
- Serve with bread; garlic or biscuits, or cornbread
- Pesto makes a fun topping
- This soup is great as a leftover even better a day later as all the flavors meld together
