I love Zucchini and always remember my grandma fixing a similar side dish on Sundays. We fix it everyday of the week(well we don’t eat it everyday but we have fixed this dish pretty much everyday if the week… left overs are great too!!!)
Here is what you will need
Ingredients
- 1-2 tbsp olive oil
- 3 medium sized zucchini sliced thin, try to get slices uniform if you can
- 1 medium onion finely diced
- 1 tbsp garlic paste
- 1 Tsp salt
- 1 Tsp black pepper
- 1 Tsp crushed red pepper
- 1 tbsp italian seasoning
- 1 small can tomato sauce
- 1/2 cup mozzerella cheese
- 1/2 cup Parmesean
Directions
- In a medium skillet heat oil
- Add onions and garlic and saute until onions sre translucent
- Add zucchini
- Add seasonings
- Stir to fully incorporate cooked onions and seasonings with zucchini
- Put a lid on and allow to steam for 5 minutes
- Take lid off and stir, if you want your zucchini cooked more put the lid back on and cook another 5 minutes
- Add can of tomato sauce stir
- Turn heat down to low
- Simmer for 10 minutes
- Turn heat off
- Add cheese and stir
- Serve immediately
- Add more Parmesean cheese if you wish
